Breakfast Challenge

I eat the same breakfast, or really two different things every single day – an egg sandwich or granola. Unfortunately it’s out of pure laziness and because I am always running late. So to mix things up a bit, I am taking on a breakfast challenge. I challenge myself to eat something different every single day of this week. Since today is the first day of the challenge, I started with something new – toasted Van’s multigrain waffles, topped with peanut butter, maple syrup, blueberries, strawberries and blackberries. It was a quick, delicious and satisfying breakfast. It kept me full all morning. In my books, that is a successful breakfast. But as you can see from the photos, I did have some help – strawberry protein shake (chef’s leftovers).I always thought of waffles as a weekend breakfast treat, but this breakfast is definitely going into my daily rotation. The first day of my breakfast challenge was a great success. I am already thinking what should I make tomorrow?
