epic dinner

This weekend had an EPIC ending! And we all know I am talking about food. As usual Kiki and I were on the go all weekend – pizza night with friends, My Gym, shopping, park time x 3 [don’t ask how we managed that one, but we did], Circus, play time, cleaning, planting….are you tired yet? It was a packed weekend with activities but we enjoyed every little bit of it. Once Sunday evening rolled around we were starved and I knew I needed a quick and satisfying meal, of course it must be Kiki approved. I turned to my pantry and with magic of a few ingredients we had an EPIC meal for Sunday night.

Our Sunday epic meal was cashew chicken with rice noodles. This recipe falls into the group of quick, satisfying, delicious, and Kiki approved meals. And when I say quick I really mean it, 15 minutes max. I must say I was smitten with this recipe! This was as flavorful as it was easy to prepare. It was a comfort food kind of meal with lots of textural contrast between the noodles, creamy chicken and crunchy cashews.   

 Kiki got a kick out of eating rice noodles. She was extremely interested in the concept of “rice noodles”. She’s never had them before so I wasn’t sure how she’d react, but I explained to her that they are made out of two of her favorite things – rice and pasta and that they are fun to it. Her response before she even tried them – “oh rice noodles are my first favorite!”.  And I really think they might be too…

Just in case you were wondering, the red minnie mouse sunglasses are mandatory when eating dinner.   

And in case you were interested, we have our weekly menu ready too. The best part of this menu is that it was put together while we were in the park today. Kiki was running in circles around me while I was reading off meals to her and for every meal that she tapped me on the shoulder made our weekly menu list. So far I must say she picked a winner, because tonight’s dinner was my first suggestion. Let’s see how we do tomorrow.

WEDNESDAY: Easy Baked Honey Mustard Chicken + Mashed Potatoes + Green Beans

THURSDAY: Thai Turkey Burgers with Peanut Sauce + Sweet Potato Fries

FRIDAY: Leftovers party

Cashew Chicken with Noodles Recipe


  • 8 ounces uncooked thick rice noodles
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 3 garlic cloves, minced
  • 1 pound boneless chicken breast
  • 1 tablespoon peanut oil
  • 1 tablespoon sesame oil
  • 1/4 cup of chicken or vegetable broth
  • 6 green onions, cut into 2-inch pieces
  • 1 cup unsalted cashews


  1. Cook rice noodles according to package directions.
  2. Meanwhile, in a small bowl, combine the soy sauce, cornstarch and garlic. Add chicken. In a large skillet, saute chicken mixture in peanut and sesame oils until no longer pink. Add onions; cook 1 minute longer.
