Lazy Chef

While I was out on the trail (the newly discovered running path), I got a message from the chef “I am feeling lazy. I am definitely not cooking tonight. I cooked on my birthday”. Even though he stopped at the grocery store and bought everything that we planned on having for dinner, cooking wasn’t happening. Knowing the chef that only meant one thing – Chipotle. It’s his favorite fast/healthy place to get lunch/dinner. It looks like the chef is extending his birthday celebrations.I always get the same thing – chicken bowl with rice, black beans, lettuce, tomato and corn salsa, cheese and guacamole on a side. Their portions are huge so I am always guaranteed to have lunch ready for the next day.Since I order guacamole on a side, I pretend this is my appetizer. The Chipotle’s guacamole is velvety, smooth and fresh. I could easily eat another bowl of it. As a matter of fact, I would be perfectly happy just to eat their guacamole and chips. My favorite chips are the original “Food Should Taste This Good”. They are crunchy and healthifed (flax seeds included), what more can you ask for.All together – yummy. Just what I was craving for – salty, spicy and fulfilling. Delicious and nutritious meal after a good run. Sometimes you just need a night off…I am exhausted, and tomorrow is a long day.     I LOVE Chipotle, especially their guacamole! I usually get a vegetarian burrito bowl with all the fixings except for sour cream and cheese. So good!

    I LOVE Chipotle! And I always get my guacamole on the side, too – they give you a big portion and I love it. 🙂
