Meatless Mondays

It’s Monday, better yet it’s Meatless Monday. For the last few weeks, we fell of the wagon when it comes to meal planning especially incorporating meatless Mondays. So for this week, I was keen on getting it right. The meals are planned, groceries are bought, pantry and fridge are full, now we just need to make those meals – well, the chef does πŸ˜‰ The meals are all chef approved, so we should be all right. No surprises this time!!!
As I was doing all the planning and prep, I tried to be conscious about what we already had in the pantry and incorporating it in all of our meals. For tonight’s dinner all we needed was ricotta cheese. Buying only one ingredient to make a delicious dinner deserves an A+, if I may say so.  My planning was flawless, but the dinner was A.M.A.Z.I.N.G.
Tonight’s dinner was simple, quick and delicious – my favorite kind of dinner, and chef’s I am sure. Hopefully, the chef will leave the recipe in the comments section…

 {For my mom and mother in law…skip this part, please}As I walked in the house, the veggies were chopped, the lasagna bubbling in the oven, and the chef was holding the baby – oh baby, oh man …now I know why we have a baby πŸ˜‰

I waited to eat my lasagna until Kiki went to bed so by than the dinner was cold, but that’s exactly how I like it. I know, I know, I know, cold lasagna, but what can I say, it’s my favorite. The salad was a mixture of all the veggies with a little bit of olive oil, salt and pepper – simple and refreshing.

 The lasagna was cheesy and gooey with crunchy ends – oh so yummy. I went for seconds…

Of course no post would be complete without a few photos of Kiki. We are getting ready for the solids and tonight we tested the high-chair.

I think high-chair received an approval. She was so happy sitting there and tasting πŸ˜‰

 This smile is absolutely priceless! It melts my heart….

 Tomorrow we will try solids…wish us good luck!
What makes my Monday bearable is great night of TV shows – The Gossip Girl, The Lying Game, Hart of Dixie, The Real Housewives of Beverly Hills, Most Eligible Dallas – thank God for DVR!!!! I am off to relax….
