National Margarita Day!

Did you know today is National Margarita Day? Yeah, me neither, but since I am a joiner, I had a Skinny Margarita on the rocks and fish tacos. Seems only appropriate to celebrate this National holiday! Let the fiesta begin!

Would you believe me if I told you this was my first time having fish tacos!?!?! I know, I am shocked too. I was kind of getting tired of always having lightly breaded fish filet. As I was searching for something different, my newly trusted Pinterest delivered yet again – Cilantro Lime Tilapia Tacos.
It was very tasty – flaky, citrusy with a lot of healthy fats. Cilantro, tomatoes and avocado are a great way to add a lot of flavor to fish. The recipe calls for tilapia, but the chef used mahi-mahi and he left out the jalapeno…still excellent.
I am so proud of the chef – he cooked everything that was on the menu for this week – total success. And now I am mentally getting ready for the weekend of indulgence. I can’t believe after so many years I am finally going to the SOBE Food & Wine Festival. Ah, the perks of my job – thank you, thank you, thank you!!!! me and the Food Network stars, oh a girl could dream and tomorrow I get to mingle with them!!!! Can’t wait! But now, I am off to bed “early” so I can do a little bit of reading, after all I have only 6 days left and a lot of pages to finish the book.
