These days I can’t seem to get enough of veggies, more specifically, I can’t get enough of asparagus. Thankfully they are in season and absolutely taste amazing. It doesn’t matter if they are oven roasted, sautéed, grilled or pan seared, I will take it all.
I always knew asparagus was good for you and loaded with vitamin C, but did you also know that it’s described as a vegetable with cleansing and healing powers. It’s a great source of potassium, folate and antioxidants. I recently read somewhere that water from cooking asparagus may help clean blemishes on the face…hmmm, may have to test that one out. *
Though Mondays is usually Meatless Monday in the Faux Foodie House, I decided to change things around and made us Chicken and Asparagus Stir Fry…talk about quick and easy, perfect for a work night. This recipe hit the spot – so simple, but with such great flavor. So if you are a chicken and asparagus fan, I highly recommend this recipe, and if you are not, you should try it anyway…I promise you, you’ll thank me for this plate of goodness. Oh and don’t forget the toasted sesame seeds, they make a world of difference!
I think someone else liked this dinner as much as I did. It still amazes me how Kiki loves veggies and there is not much arguing over things I put in front of her. I should really be thankful for a good and adventures eater!
I love watching her eat….she always holds onto her fork with one hand and with the other picking up her next bite, just in case she doesn’t get it right with the fork.
I’ve also noticed she ate all the asparagus first, then chicken and barely touched the rice. I don’t blame her, the rice tasted terrible. Thankfully our company cancelled on us tonight and I didn’t embarrass myself with watery tasteless rice. I can’t seem to get the rice right. It really shouldn’t be such a big deal, but for some reason I can’t get it right. Oh but I will!!!!
Totally of the topic, but aren’t you envious of the baby highlights? I mean, the money I pay to have that color, shine and silkiness is ridiculous and she has it naturally. And those curls…how I love thy!?!
Chicken and Asparagus Stir-Fry
In a small bowl or in a ziplock bag, combine soy sauce and honey. Add chicken, and stir to coat. Set in the refrigerator until ready.
Meanwhile, heat oil in a large skillet over medium-high heat. Add asparagus, and saute until cooked, about 5 minutes. Remove the asparagus with a slotted spoon, and set aside.
Remove chicken from marinade, and add to skillet. Saute until nearly cooked through (with the insides still slightly pink), about 5 minutes. Then add garlic, scallions, and the reserved marinade to the pan. Sauté for an additional 2 minutes until the chicken is cooked and the garlic is fragrant. Remove from heat and stir in sesame oil. Serve immediately with rice, garnished with toasted sesame seeds if desired.vegetables
