Seeds of Change

Tonight’s dinner has been on my mind since Saturday… I knew it would be delicious, tasty and healthy and it really was. Extra special because I made it. Hooray for ME!!! Yup, I am my own biggest cheerleader and this stuff  is getting good.

OK, so I might have cheated a little bit and took some shortcuts, but they were completely worth it.  I recently bought organic “Seeds of Change” quinoa and whole grain brown rice packets at Costco and tonight was a perfect night to try them – 90 sec in microwave and voila. I know will get to the point where I can make this mixture from scratch, but tonight the shortcut of microwaved bag of healthy grains bursting with flavor was the right choice. I certainly need to incorporate it into my weekly menu.

Tonight’s deliciousness included oven-roasted brussel sprouts, pan fried al fresco Italian chicken sausage and quinoa and whole grain brown rice. Talk about healthy dinner, perhaps minus the chicken sausage, but please trust me when I say it’s one of the healthiest sausages you can get in your grocery store.

The chef has never been a fan of brussels sprouts, but now that I am in charge of the kitchen they will certainly be making an appearance a lot more often. Something about the bitterness of brussels sprouts that makes me think they are that much healthier and better for me that any other veggie.  I cut off the ends first, than I cut them into halves and placed on the cooking sheet. Once they were all lined up, I added a little bit of olive oil, salt and pepper and baked for 20 minutes on 400F. They were so flavorful and crunchy – yum.

Tonight’s dinner was done in 20 minutes. I can definitely do that, tonight and every night. I still haven’t built up to handling chicken but that moment is coming.  Maybe this weekend, you should come back and check it out.

This face…oh my precious little baby, isn’t she adorable!!!! I am in love with this smile. Today I tried playing with her and all she wanted to do was read her books – like momma, like baby girl. So we read for three hours – and reading really means turning page after page after page, skipping few pages here and there, but we read all of her books at least 3 times from front to back and sometimes from back to front and it was the best three hours of my life. Can’t wait to do it all over again tomorrow! It’s incredible how this little person can bring so much joy to my life!
