Today was kind of a great day. I got to spend the morning with Kiki, had a productive afternoon in the office and come home and relaxed with a tasty dinner. Now that’s what I call a great day!
Since Kiki is almost 18 months old I think it’s time to start thinking of day care, school, kindergarden, etc. I think she would thrive in the “school” environment. So I’ve been thinking a day or two a week will be great to begin with and than depending on the schedules and all, up the number of days. When we were done with the tour, my daughter cried and wanted to go back into the classroom, rather than go home withe me. It actually makes me really happy that she liked it so much, especially the science corner. What can I say, I have a little nerd 🙂
After the “little nerd” went to sleep, I was in need of relaxing. The evening got a little tense and I needed to get my mind off of things that really shouldn’t matter to me anymore, so I decided to make dinner and follow my weekly menu plan. And it worked… I made another “smashing” savory meal. My body is definitely in need of veggies, so I am trying to sneak them into every meal.
Tonight on the menu I “featured” shrimp and spinach. My body was in need to protein and antioxidants – anything to keep me lean, healthy and mean, OK, just a little mean 😉
This was a very tasty dinner that included multigrain penne pasta, shrimp, shaved parmesan cheese, baby spinach, cherry tomatoes, chopped walnuts and pesto and all done in 15 minutes, and devoured in 5;) It seems like a lot of ingredients, but surprisingly it all went so well together.
I have a date with my DVR tonight. It’s bursting with shows from last two weeks and I can’t seem to catch up aka clean it up. There are just way too many things that I am liking this fall season….
