Today is a glorious day or so I was telling myself

Today is/was a glorious day! Today is/was a glorious day! or at least that’s what I was telling myself at 5:30am when the alarm went off. Today is more known as a first day of the marathon training. Glorious or not, I finished my first training day and that’s all that matters.Yesterday I finally signed up to train with the Runner’s Depot Training Team for the November 1/2 marathon and I bought a pair of new sneakers. This little purchase was very much needed, as my old sneaks had more than 350 miles on them. Plus, something new and shiny was perfect to get me going at 5:30 on Monday morning.Once I got on the road, the temperature was perfect for Florida summers – 73F and very little humidity. If I dare to say, I was even feeling some breeze. About 1/2 way through it started raining. It was a nice and refreshing rain and it stopped right as I arrived to my doorstep after 3.5 miles. This is what I call perfect timing.The chef had every intention of getting up with me, but since we have a furry guest with us that kept him awake half the night, he decided that his run could wait till the afternoon. But he was kind enough to prepare a delicious breakfast – egg sandwich. Yup, my love for egg sandwiches is still going strong. I can’t seem to get enough of them. The new twist to the old traditional egg sandwich – adding some cheddar cheese. Pure magic!!!!I didn’t skip lunch, but I just don’t have pictures to show for, but if you can imagine croissant, baby spinach and curry chicken….you are imagining the most decadent sandwich ever. Courtesy of The Fresh Market – Flamingo Road.For dinner, the chef made channa massala or as I like to call it Meatless Monday meal. According to the MM website, Meatless Monday is an international campaign that encourages people to not eat meat on Mondays to improve their health and the health of the planet. Reducing meat consumption by 15% (the equivalent of one day a week) lessens the risk of chronic preventable illness and has a strong impact on the environment.Philosophy behind Meatless Mondays is that MM focuses its initiative on Mondays for multiple reasons. Monday is typically the beginning of the work week, the day when individuals settle back into their weekly routine. Unhealthy habits that prevailed over the weekend can be forgotten and replaced by positive choices. A weekly reminder to restart healthy habits also encourages success.I love being a vegetarian for dinner. As much as I love meat, vegetarian meals make me feel lighter and healthier. Tonight’s chana masala with jasmine rice was our first time, and I really enjoyed it. The spices and sour citrus were a lot stronger than what I am used to eating every day, but it certainly added a new dimension to such an ordinary meal.In case you are wondering, along the chickpeas, the ingredients used were: onion, chopped tomatoes, turmeric, coriander, garlic, chiles, ginger, dried mango and garam masala.I am off to think about my breakfast for tomorrow – it’s buckwheat pancakes time.
