Weekly Menu

I was so out of my element on Sunday since Kiki was with her dad…I missed her laying in bed with me, drinking our “kava” (coffee), and doing our meal planning, I missed her chatter, I missed her laughter, I missed her ordering me around, I missed her. 

But life goes on…So I put together our weekly menu while waiting for my coffee in the Starbucks drive-through…I just hope I don’t regret it once I actually start making our meals.

I went to a BBQ on Sunday and made watermelon caprese salad and pesto pasta for the little gathering. Since I had some leftover pesto, I decided to experiment a little and made baked chicken stuffed with pesto and cheese. May I say yum! And it was Kiki approved! which of course, is the most important part of meal planning. Oh and by the way, it took me only 35 minutes to make it. So run to the kitchen, and stuff your chicken with pesto/sour cream/mozzarella cheese mixture (1tbsp of each), dip it in the egg/flour/parmesan mixture and bake for 35 minutes on 375F. 

So let’s hope this menu works out this week, but here’s what we’ll be feasting on….

Sunday: BBQ

Monday: Baked Chicken Stuffed with Pesto + Cheese

Tuesday: Chickpea + Tuna Salad

Wednesday:  Sun-Dried Tomato Pesto Pasta with Spinach + Blackened Chicken

Thursday: Chicken-Orzo Salad with Goat Cheese

Friday: Pizza night

Saturday: Refrigerator clean-up
